Special Khasmiri Briyani
Ingredients / Bahan2
600 gm. Basmati Rice | 600 gm. Beras Basmati (Faizah) |
100 gm. green peas, | 100 gm. Kacang Peas Hijau |
2” Ginger | 2” Halia |
2 Tsp. Garam Masala / Salt to taste | 2 Sudu Kecil Garam Masala / Garam Secukup Rasa |
100 gm. potatoes, | 100 gm. Kentang |
100 gm. carrots, | 100 gm. Karot |
100 gm. French beans | 100 gm. French Bean |
1 Tsp. Turmeric Powder | 1 Sudu kecil |
100 gm. Spinach | 100 gm. Bayam |
2 ½ Tsp. Red Chili Powder | 2 ½ Sudu Kecil Cili Kering |
2” Cinnamon | 2” Cinnamon |
1 Tsp. Clove | 1 Tsp. Cengkeh |
2 Medium Size Tomato | 2 Biji Tomato saiz sederhana |
3 large onions | 3 Biji Bawang Besar |
1/2 cup each of milk and melted ghee or oil. | 1 ½ Cawan Campuran Susu Cair/Minyak sapi/Minyal Masak – sama banyak. |
10 Cloves Garlic | 10 Labu Bawang Putih |
3 Green Chilli | 3 Biji Cili Hijau Segar |
8 Small Onion or shallot | 8 Biji bawang merah kecil |
25 gm. Cashew Nut | 25 gm. Kacang Gajus |
25 gm. Almond NutMake a mixture of curd, garlic, | 25 gm. Kacang Almond |
1 Cup Yogurt or Milk Curd | 1 Cawan Yogurt atau Kepala Susu |
Preparation of Ingredients / Penyediaan bahan2
Prepare rice-soak for about 30 min & cut the vegetables into small cubes & boil them till sufficiently soft. You may also grated about 2 Tbsp. of carrot | Bersihkan beras dan direndam selama 30 minit. Bersihkan semua bahan sayur, kentang dan karot di potong dadu. Parut kasar lebih kurang 2 sudu besar karot. |
Fry the pieces of almond and cashew nut till golden brown. | Rendang kering kacang gajus dan kacang amond kemudian di pecah2 kan. |
Heat ghee in a pan & Slice thinly the shallot then fry the onions till golden brown | Ambil sedikit minyak sapi kemudian goring bawang merah hingga garing. |
Make a mixture of curd, garlic to thinly slice, ginger cut into thin julienne, salt, garam masala, turmeric, red chilli powder & fry with onions for 2-3 mins. Add the nuts & tomato puree & fry for 4-5 mins. On medium flame. | Gaul bahan2 seperti kepala susu atau yogurt, bawang putih, halia, garam 2, serbuk kunyit , sebuk lada merah dan bawang merah yang digoreng. Masukan kacang gajus, almond kemudian masukan tomato yang dikisar gaul rata2 kemudian dimasak pada kadar api sederhana – 4-5 minit |
Add peas & stir for some time. Add rest of the vegetable & little water & cook on low flame till the gravy is thick enough. | Masukan kacang peas, dan semua bahan lain dimasak pada api tahap rendah sehingga semua bahan menjadi sebati dan pekat. |
Tosses dry the rice a little. | Beras ditoskan sehingga semua air terbuang. |
How To Cook? Bagaimana hendak dimasak?
You may use electric cooker in making Briyani.However I am going to use semi-high pressure cooking pot. | Boleh juga mengunakan periuk letrik untuk memasak biryani, saya akan gunakan periuk tekanan sederhana. |
Add in about 2/3 portion ie: 400m gm. Into the pot, pour in the gravy prepared earlier, also about 2/3 of it. Then add in the remaining Basmati rice and pour in the remaining gravy. So with the fried onion sliced. | Masukan kedalam periuk 2/3 bahagian beras basmati, Curahkan gaulan kuah sayuran dan rempah ratus, masukan lebihan beras tadi dan curahkan semua baki kuah tadi |
Sprinkle with grated carrot, squeeze a bit of lemon or you may also top it up with coriander leaves. Let’s it cook under slow heat for about 10-15 minits, and wait until cooked, when the steam of aroma begin to permeate the air | Boleh juga di taburkan karot yang diparut, bawang goreng. Masukan juga perahan lemon ½ bahagian sahaja, daun ketumbar dan dibiarkan mendidih diparas api yang rendah selama 15 minit lagi. Bila haruman semerbak ini menandakan biryani hamper masak. |
